Taco Tuesday doesn't have to be limited to just tacos, you know. You can use it as an excuse (not that you need one) to celebrate classic Tex-Mex flavors in all sorts of interesting ways! Case in point, Easy Mexican Macaroni Dinner. Tender pasta coated in zesty, spicy Tex-Mex seasoning, with huge bites of savory taco meat. Oh, and a blanket of melty cheese on top! Easy Mexican Macaroni Dinner is a great weekday meal that you'll love eating!
Ingredients
- 1 pound extra-lean ground beef
- 1 large onion, chopped
- 1 1/4 teaspoons chili powder
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1 (14.5-ounce) can diced tomatoes
- 1 (8-ounce) can tomato sauce
- 1 cup fresh or frozen corn
- 1 1/2 cups water
- 1 (16-ounce) package elbow macaroni
- 1/2 cup low-fat cheddar cheese, shredded
Directions
Step 1 -In a large, nonstick skillet over medium-high heat, add the beef and the onions and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
Step 2 -Add the chili powder, the oregano, the salt, the diced tomatoes and their juices, the tomato sauce, the corn, and the water to the beef mixture and stir to combine.
Step 3 -Bring the beef mixture to a boil.
Step 4 -Add the macaroni to the beef mixture and stir to combine.
Step 5 -Reduce the heat to medium-low and cover the skillet.
Step 6 -Allow the beef mixture to simmer, while stirring occasionally, until the macaroni is tender, about 15-20 minutes.
Step 7 -Sprinkle the beef mixture evenly with the cheese.
Step 8 -Serve.
