We think this dessert really takes the cake! Andy's Brownies will be a splendid and surprising treat for all your guests to enjoy! It is so easy... just take your favorite brownie mix, add a cool mint frosting layer and a decadent chocolate layer, and you'll have an even more delicious replica of your favorite chocolate-mint candy! Andy's Brownies are so fresh, so surprising, and oh, so delicious! Andy knows where it's at!
Ingredients
- 1 (16-18-ounce) package fudge brownie mix, plus the ingredients called for on the package
- 2 cups powdered sugar
- 1/2 cup plus 6 tablespoons butter, softened, divided
- 2 tablespoons mint extract
- 2-3 drops green food coloring
- 1 tablespoon milk
- 2 cups semisweet chocolate chips
Directions
Step 1 -Preheat the oven according to the brownie package directions.
Step 2 -Line a 9x13-inch baking dish with parchment paper and lightly grease the paper.
Step 3 -Prepare the brownies according to the package directions.
Step 4 -Transfer the batter to the prepared baking dish.
Step 5 -Bake the brownies according to the package directions.
Step 6 -Transfer the baked brownies from the oven to a wire rack and let them cool.
Step 7 -In a medium bowl, add the powdered sugar, 1/2 cup of the softened butter, the mint extract, the food coloring, and the milk and beat using an electric hand mixer until smooth.
Step 8 -Evenly spread the mint frosting mixture over the cooled brownies.
Step 9 -In a microwave-safe bowl, add the chocolate chips and the remaining butter and melt in the microwave in 30-second intervals, stirring after each interval until smooth, about 1 minute 30 seconds.
Step 10 -Allow the chocolate mixture to cool slightly. If it is too hot when it goes on the mint frosting, it will melt the frosting.
Step 11 -Evenly spread the cooled chocolate mixture over the mint frosting layer.
Step 12 -Cover and chill the brownies for at least 1 hour.
Step 13 -Let the brownies sit out at room temperature, about 20-30 minutes.
Step 14 -Slice into squares and serve.
