You're about to add an egg-cellent, new player to your breakfast roster! Let's all cheer for the All-Star Breakfast Tacos because they're going to be a huge game changer! The fluffiest tortillas (to ever be) are packed full of creamy, scrambled eggs, hearty sausage, tender potatoes, and melty cheese to create the kind of savory stats worthy of the MVP title. All-Star Breakfast Tacos really leave it all on the plate to create a historical, record-breaking morning meal... unlike anything you've ever tasted before!
Ingredients
- For the breakfast tacos:
- 1 pound bulk pork sausage
- 1 (28-ounce) package frozen potatoes, thawed
- 2 cups sharp cheddar cheese, shredded
- 12 large eggs
- 1/2 cup 2% milk
- 1/4 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 12 fajita-style flour tortillas, warmed
- Optional toppings:
- salsa, to taste
- jalapeños, to taste, sliced
- tomatoes, to taste, chopped
- green onions, to taste, sliced
- avocado, to taste, sliced
- cilantro leaves, to taste
Directions
Step 1 -Grease a 4-5-quart slow cooker.
Step 2 -In a large skillet over medium heat, cook the sausage, while crumbling, until it is no longer pink, about 8-10 minutes. Drain the excess grease.
Step 3 -Layer the potatoes, the cooked sausage, and the cheese in the prepared slow cooker.
Step 4 -In a large bowl, whisk the eggs, the milk, the seasoned salt, and the pepper together, then pour it over the layers in the slow cooker.
Step 5 -Cover the slow cooker and cook the sausage mixture on low heat until the eggs are set and a food thermometer inserted into the center reads 160 degrees F, about 3 hours 45 minutes-4 hours 15 minutes.
Step 6 -Let the sausage mixture stand, about 10 minutes.
Step 7 -Add equal amounts of the sausage mixture to each of the tortillas.
Step 8 -Serve the tacos with your favorite toppings.
