You don't always have to turn to tacos when the Tex-Mex cravings start to talk! Instead, try out their crunchy cousin we call Loaded Chicken Tostadas! These circular sensations pack all sorts of juicy chicken, creamy refried beans, and all the toppings you can imagine on top of a crispy corn tortilla. You might need a few napkins when chowing down on these Loaded Chicken Tostadas, but boy, oh, boy, you'll be glad you switched things up!
Ingredients
- For the chicken tostadas:
- 4 corn tortillas
- 2 cups chicken breast, boneless and skinless, cooked and shredded
- 2 limes, juiced
- 1/4 cup cilantro
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- salt, to taste
- pepper, to taste
- 1 cup canned refried beans, warmed
- Optional toppings:
- 1 cup lettuce, shredded
- 1 cup tomatoes, chopped
- 1/4 cup red onion, chopped
- 1/4 cup queso fresco
- 1 avocado, sliced
- 1/4 cup salsa
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Place the tortillas on a baking sheet and bake until they are crispy, about 4 minutes per side.
Step 3 -In a bowl, add the shredded chicken, the lime juice, the cilantro, the cumin, the garlic powder, the chili powder, the salt, and the pepper and stir to combine.
Step 4 -Evenly spread the refried beans over the toasted tortillas and evenly top with the chicken mixture.
Step 5 -Serve the chicken tostadas with your favorite toppings.
