Adding something green to your meal couldn't be simpler! This Crunchy Kale Salad only takes a few minutes to throw together and uses fresh, nourishing ingredients to add the tasty, healthy element to your lunch or dinner that you were missing! And hey, you could even add some protein and turn the Crunchy Kale Salad into your main course. The options are endless, but always good for you with this one!
Ingredients
- For the peanut vinaigrette:
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh lime juice
- 2 teaspoons Dijon mustard
- 1 teaspoon honey
- kosher salt, to taste
- pepper, to taste
- crushed red pepper flakes, to taste
- 1/3 cup roasted peanut oil
- For the kale salad:
- 6 cups green kale, shredded
- 4 cups green cabbage, shredded
- 4 green onions, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup parmesan cheese, finely grated
- 1/2 cup salted roasted peanuts, chopped
- lime wedges, to taste, for garnish
Directions
Step 1 -In a bowl, add the apple cider vinegar, the lime juice, the Dijon mustard, the honey, the salt, the pepper, and the crushed red pepper flakes and whisk to combine.
Step 2 -Slowly stream the roasted peanut oil into the vinaigrette mixture, while whisking constantly.
Step 3 -In a large bowl, add the kale and the cabbage and toss to combine.
Step 4 -Drizzle 1/4 cup of the peanut vinaigrette over the greens and use your hands to massage it in.
Step 5 -Let the dressed greens sit for 5 minutes.
Step 6 -Add the green onions, the cilantro, and the parmesan to the dressed greens and toss well.
Step 7 -Sprinkle the chopped peanuts over the salad and drizzle with as much of the remaining dressing as desired.
Step 8 -Serve the salad garnished with the lime wedges.
