Ingredients

  • 2 1/2 cups water
  • 2 tablespoons olive oil or butter, optional
  • 10 ounces yellow rice
  • 1 (15-ounce) can black beans
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons cilantro, chopped, plus more, to taste, for garnish
  • 1 lime, juiced
  • 1/4 cup sour cream, optional

Directions

Step 1 - In a large saucepan with a tight-fitting lid, bring the water to a boil.

Step 2 -Add the olive oil to the boiling water.

Step 3 -Add the yellow rice and stir for 1 minute while the water is boiling.

Step 4 -Cover tightly and reduce the heat to a simmer.

Step 5 -Cook the rice until tender, about 20-25 minutes.

Step 6 -Rinse the black beans and drain well.

Step 7 -Add the beans to a skillet over medium heat.

Step 8 -Add the cumin, the chili powder, 2 tablespoons of the cilantro, and the lime juice to the beans in the skillet and cook until the beans are heated through, about 5 minutes.

Step 9 -Once the rice is done, stir the warm beans into the rice and top with a dollop of the sour cream.

Step 10 -Garnish with the extra cilantro.

Step 11 -Serve.
