You've heard of the loaded baked potato, right? It's tasty but yikes, it's heavy on the carbs. Yum-Yum Loaded Cauliflower Casserole brings everything you love about that dish, like melty cheese and crispy bacon, and sprinkles it atop some tender, flavorful cauliflower (disguised as potatoes). Trust us, it's delicious. And your heart will thank you for the switch up, too! Yum-Yum Loaded Cauliflower Casserole might just be your new go-to... you never know until you try!
Ingredients
- 3 slices bacon
- 1 head cauliflower, cut into bite-size pieces
- 1/2 teaspoon ground pepper
- 1/4 teaspoon salt
- 1 1/4 cups sharp cheddar cheese, shredded, divided
- 2/3 cup sour cream
- 4 scallions, sliced, divided
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -In a large skillet over medium heat, cook the bacon strips until they are crisp, about 6-8 minutes.
Step 3 -Transfer the cooked bacon to a paper-towel-lined plate, reserve the drippings in the pan, and let the bacon cool.
Step 4 -In a 9x13-inch baking dish, combine the cauliflower, the pepper, the salt, and the bacon drippings.
Step 5 -Roast the cauliflower mixture, stirring it twice, until it is tender, about 35 minutes.
Step 6 -While the cauliflower mixture is roasting, in a small bowl, combine 1 cup of the cheese, the sour cream, and 1/2 the scallions.
Step 7 -Stir the cheese mixture into the cauliflower mixture, and then sprinkle the top with the remaining cheese.
Step 8 -Bake the casserole until the cheese has melted, about 5-7 minutes.
Step 9 -Chop the cooled bacon.
Step 10 -Sprinkle the casserole with the bacon pieces and the remaining scallions.
Step 11 -Serve.
