Ingredients
- 8 ounces bow tie pasta
- 1 (8-ounce) package frozen broccoli florets
- 1 tablespoon olive oil
- 1 pound chicken breast, boneless and skinless, cut into 1/2-inch pieces
- 1/2 cup chicken broth
- 4 ounces cream cheese, room temperature
- 1/3 cup prepared basil pesto
Directions
Step 1 -In a large pot of salted, boiling water, add the pasta and cook it to 2-3 minutes shy of al dente, according to the package directions, about 7-8 minutes.
Step 2 -Add the broccoli to the boiling water and cook, while stirring occasionally, until the broccoli is tender, about 2-3 minutes.
Step 3 -Drain the broccoli and the pasta.
Step 4 -In a large skillet over medium heat, add the olive oil.
Step 5 -Add the chicken pieces to the hot oil and cook, while stirring, until the chicken pieces are almost cooked through, about 4-6 minutes.
Step 6 -Add the chicken broth to the chicken pieces and allow it to heat.
Step 7 -Add the cream cheese and the pesto to the chicken mixture and cook, while stirring, until the cream cheese is melted and has created a smooth sauce and the chicken pieces reach an internal temperature of 165 degrees F, about 2-3 minutes.
Step 8 -Add the pasta-broccoli mixture to the chicken mixture and stir to combine.
Step 9 -Serve hot.
