Ah, Wednesday. Hump Day. What is there to do with this day... so close yet so far from the weekend? Why, the answer is simple: make something delicious that will carry you through the rest of the week, and with an added spring in your step! That's the Wednesday Salad for you! Cubes of refreshing, sweet watermelon and creamy avocado are dressed in tangy lime juice, sprinkled with cool mint, and then topped with creamy feta cheese for a touch of contrasting sharpness. Wednesday Salad might just be the ultimate summer salad, and it will liven up any day of the week!
Ingredients
- 6 cups watermelon, cubed
- 1-2 avocados, cubed
- 2 tablespoons freshly squeezed lime juice
- 1/4 cup fresh mint leaves, chopped or torn
- 1/2 cup feta cheese, crumbled
Directions
Step 1 -Place the watermelon and the avocado in a large salad bowl.
Step 2 -Add the lime juice and the mint and gently toss to combine.
Step 3 -Crumble the feta cheese over the salad.
Step 4 -Serve.
