Wake up! It's time to eat... and we're hungry! You will be too once you smell this Turkey Sausage Breakfast Bake coming out of the oven. Nothing gets things started better than this spicy turkey sausage casserole that's loaded with all kinds of tender veggies and some fluffy eggs. And what's a morning bake without plenty of melty cheese?! Yep, this Turkey Sausage Breakfast Bake has got that, too. Are you up and at 'em?! Good, then let's dig in!
Ingredients
- 14 ounces spicy turkey sausage, casings removed
- 3/4 pound mixed mushrooms, trimmed and sliced
- kosher salt, to taste
- ground pepper, to taste
- 1 small onion, diced
- 8 slices bread, such as whole wheat or hearty white, cut into 1-inch cubes
- 1 1/2 cups low-fat Jarlsberg® or Gruyère cheese, finely grated
- 1 pint grape tomatoes, halved
- 5 large whole eggs
- 5 large egg whites
- 1 1/2 cups low-fat milk
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -Coat a medium nonstick skillet with cooking spray and heat over medium heat.
Step 4 -Add the sausage to the skillet and cook, while crumbling, until it is browned, about 10 minutes.
Step 5 -Use a slotted spoon to transfer the sausage to a plate.
Step 6 -In the same skillet over medium-high heat, add the mushrooms and cook, stirring occasionally, until they begin to brown, about 4 minutes.
Step 7 -Season the mushrooms with the salt and the pepper.
Step 8 -Reduce the heat to medium-low.
Step 9 -Add the onion to the mushrooms and cook, stirring occasionally, until the onion is soft and the mushrooms are well-browned, about 4 minutes.
Step 10 -In a medium bowl, add the bread, the cheese, the tomatoes, the cooked sausage, and the cooked mushroom mixture.
Step 11 -Evenly spread the sausage mixture onto the bottom of the prepared baking dish.
Step 12 -In a medium bowl, crack the whole eggs. Then add the egg whites and whisk them together.
Step 13 -Whisk the milk into the egg mixture, then pour it over the sausage mixture.
Step 14 -Cover the baking dish with aluminum foil and let the casserole sit for 10 minutes. Gently press down on the foil to ensure the layer of the bread cubes soak up the liquid.
Step 15 -Bake the casserole, covered, about 35 minutes.
Step 16 -Discard the foil and bake the casserole, about 15 minutes.
Step 17 -Let the casserole rest for 15 minutes.
Step 18 -Serve.
