Ingredients

  • For the brownies:
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons red food coloring
  • 1 teaspoon white vinegar
  • 1/4 cup cocoa powder
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the cheesecake filling:
  • 1 (8-ounce) package cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line a 9x9-inch baking dish with parchment paper or grease it well with cooking spray.

Step 3 -In a large bowl or the bowl of a stand mixer, mix the butter and 1 cup of the sugar until combined.

Step 4 -Add 2 of the eggs, 1 teaspoon of the vanilla, the red food coloring, and the vinegar and mix to combine.

Step 5 -Add the cocoa powder, the flour, the baking soda, and the salt and mix until combined.

Step 6 -Spread the batter in the prepared pan, reserving about 1/2 cup of the batter.

Step 7 -In a medium bowl, beat the cream cheese with the remaining sugar until combined.

Step 8 -Add the remaining egg and the remaining vanilla and mix until smooth.

Step 9 -Spread the cheesecake mixture over the brownie batter layer in the prepared pan.

Step 10 -Scoop the reserved brownie batter into a resealable plastic bag.

Step 11 -Cut a small part of the corner off of the plastic bag.

Step 12 -Pipe the reserved brownie batter in lines across the top of the cheesecake layer.

Step 13 -Drag a toothpick through the lines of batter to create a swirl patten.

Step 14 -Bake until a toothpick inserted into the brownies comes out clean, about 30-45 minutes.

Step 15 -Let the brownies cool and serve.
