  • 2 pounds yams or sweet potatoes, scrubbed and peeled, sliced into 1/2-inch rounds.
  • 3/4 cup dark brown sugar
  • 1 cup white sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 2 tablespoons vanilla extract
  • 1 stick butter, melted
  • 4 tablespoons frozen orange juice concentrate, thawed

Directions

Step 1 -In a medium pot over medium-high heat, combine the yams, the brown sugar, the white sugar, the cinnamon, the nutmeg, the ginger, the salt, the vanilla, the melted butter, and the orange juice concentrate.

Step 2 -Stir the yam mixture until fully combined.

Step 3 -Let the yam mixture come to a boil.

Step 4 -Cover and let the yam mixture simmer until the yams are tender, about 50 minutes.

Step 5 -Remove the lid and set heat to medium.

Step 6 -Let the yam mixture come to a boil.

Step 7 -Stir occasionally for 10 minutes or until the yam mixture reduces and the syrup coats the yams.
