Nothing quite warms the soul like a big, 'ole pot roast right out of the oven. One filled with your favorite veggies, cooked to the softest perfection... so buttery and tender it requires hardly any effort to chew. And speaking of tender, the meat! It's always so juicy and rosy and satisfying to bite into. Sounds like a cold weather dream of a feast, eh? Well, that dream is actually a reality and it's called One-Pot Pork Roast & Veggies. It's not a figment of your imagination, it's an explosion of flavors on your tastebuds. Ready to feel the coziest you've ever felt? One-Pot Pork Roast & Veggies are waiting for you!
Ingredients
- 1 (3-3.5-pound) pork sirloin
- salt, to taste
- pepper, to taste
- 1 teaspoon Italian seasoning
- 1 1/2 tablespoons olive oil
- 3/4 cup vegetable broth
- 1 tablespoon honey
- 1/4 cup dry white wine, optional
- 3-4 potatoes, rinsed, quartered, and skin-on
- 4-6 carrots, cleaned, trimmed, and skin-on
- 6 cloves garlic, skin-on
- 1 scallion, sliced
Directions
Step 1 -Season the pork with the salt, the pepper, and the Italian seasoning.
Step 2 -In a large pot over medium-high heat, warm the oil.
Step 3 -Brown the roast on all sides in the oil, about 8-10 minutes. It will not be cooked through.
Step 4 -In a bowl, combine the vegetable broth and the honey.
Step 5 -Pour the broth mixture over the meat to deglaze the pot.
Step 6 -Add the white wine to the broth mixture.
Step 7 -Arrange the potatoes, the carrots, and the garlic around the meat in the pot.
Step 8 -Sprinkle the meat with the scallions.
Step 9 -Cover and simmer on low, basting the meat and the veggies with the juices occasionally, until the pork is tender and reaches 145 degrees F internally, about 5-7 hours.
Step 10 -Adjust the seasoning with the salt and the pepper, as needed.
Step 11 -Serve.
