Ingredients

  • For the chicken:
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup flour
  • 1 cup parmesan, grated
  • 1 1/2 pounds chicken breast cutlets, boneless and skinless
  • 2 tablespoons olive oil
  • For the sauce:
  • 6 tablespoons butter
  • 4 cloves garlic
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1/2 cup fresh basil, chopped, plus more, to taste, whole leaves, for garnish
  • 8 ounces pasta, such as fettucine, cooked
  • lemon slices, to taste, for garnish

Directions

Step 1 -In a shallow bowl, add the eggs and whisk to combine.

Step 2 -In another shallow bowl, add the salt, the pepper, the Italian seasoning, the flour, and the parmesan and mix to combine.

Step 3 -Dredge the chicken cutlets into the egg mixture, then immediately into the flour mixture to coat.

Step 4 -In a large skillet over medium-high heat, add the oil.

Step 5 -Add the coated chicken cutlets to the skillet and sear, about 2 minutes on each side.

Step 6 -Place the lid on the skillet and reduce the heat to low.

Step 7 -Cook the chicken cutlets until they reach an internal temperature of 165 degrees F, about 3-6 minutes.

Step 8 -Transfer the chicken cutlets to a resting plate.

Step 9 -Add the butter and the garlic to the same skillet and increase the heat to medium. Stir until the butter has melted.

Step 10 -Add the chicken broth and the lemon juice to the garlic-butter and bring to a simmer.

Step 11 -Cook the sauce mixture until it has reduced by about 1/3.

Step 12 -Add 1/2 cup of the basil and the cooked pasta to the sauce and stir to combine.

Step 13 -Place the cooked chicken in the pasta mixture.

Step 14 -Serve the chicken pasta garnished with the extra basil leaves and the lemon slices.
