Treat them to this perfectly tender fillet that gets soaked in a lemony, garlicky, butter sauce and then sliced for sharing. They'll quickly understand just how much you care! Ingredients
- 1 (1.5-pound) cod loin fillet, skinless and patted dry
- salt, to taste
- pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons lemon juice
- 4 cloves garlic, minced
- 1/4 cup butter, diced
- 1 small lemon, sliced into rounds
- parsley, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly grease a rectangular baking dish.
Step 3 -Season the cod fillet with the salt and the pepper and place it in the prepared baking dish.
Step 4 -In a bowl, add the olive oil, the lemon juice, the garlic, the salt, and the pepper and whisk to combine.
Step 5 -Pour the lemon sauce over the cod fillet and evenly top with the diced butter and the lemon slices.
Step 6 -Bake the cod fillet until it reaches an internal temperature of 145 degrees F and flakes easily, about 15-20 minutes.
Step 7 -Slice the cod fillet into serving-size pieces.
Step 8 -Serve the cod garnished with the parsley and the lemon slices from the baking dish.
