That savory, tangy sauce, those tender noodles, those savory bites of chicken and vegetables... it's all here and just delicious! Easy Chicken Lo Mein makes your Asian cuisine craving easy to solve!
Ingredients
- 3 tablespoons soy sauce
- 3 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 8 ounces lo mein noodles
- 2 tablespoons olive oil, divided
- 1 pound chicken breast, boneless and skinless, sliced into small strips
- salt, to taste
- black pepper, to taste
- 1/4 cup onion, chopped
- 1 cup snow peas
- 1 cup carrots, shredded
- 1 red bell pepper, sliced into strips
- 1 (8-ounce) package mushrooms, sliced
- 2 cloves garlic, minced
- green onions, optional, to taste, sliced, for topping
Directions
Step 1 -In a small bowl or dish, add the soy sauce, the oyster sauce, and the sesame oil and whisk to combine. Set the sauce mixture aside.
Step 2 -In a large pot of boiling water, cook the noodles according to the package directions.
Step 3 -Drain the noodles.
Step 4 -In a large skillet over medium-high heat, add 1 tablespoon of the olive oil.
Step 5 -Season the chicken strips with the salt and the pepper.
Step 6 -Add the chicken strips to the hot oil and cook, turning them occasionally, until browned and all sides and the meat reaches an internal temperature of 165 degrees F, about 5-7 minutes.
Step 7 -Transfer the chicken strips to a clean plate.
Step 8 -Add the remaining olive oil to the same skillet over medium-high heat and allow it to heat.
Step 9 -Add the onions and cook, while stirring, until softened, about 2-4 minutes.
Step 10 -Add the snow peas, the carrots, the bell peppers, and the mushrooms and cook, while stirring, until they begin to soften, about 3-4 minutes.
Step 11 -Add the garlic to the vegetable mixture and cook, while stirring, until fragrant, about 1 minute.
Step 12 -Add the cooked noodles, the cooked chicken, and the sauce mixture to the vegetable mixture and cook, while stirring and tossing, until the sauce thickens, about 1-2 minutes.
Step 13 -Serve topped with the green onions.
