Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 4 ounces cream cheese
  • 1 can corn, drained
  • 1 (8.5-ounce) box cornbread mix
  • 1 egg, for the cornbread (or adjust according to package directions)
  • 1/3 cup milk, for the cornbread (or adjust according to package directions)
  • 1/2 cup cheese, shredded
  • 1 tablespoon cilantro, optional, chopped

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Grease a pie dish.

Step 3 -In a large skillet over medium heat on the stove-top, add the beef. Cook until no longer pink.

Step 4 -Drain the fat from the bottom of the skillet.

Step 5 -Add the taco seasoning, salsa, and cream cheese to the beef in the skillet.

Step 6 -Cook until the cream cheese is melted and all ingredients are well combined.

Step 7 -Pour the beef mixture into the greased pie pan.

Step 8 -Top the beef mixture with the corn.

Step 9 -Mix the cornbread with the egg and milk, following package directions, but do not bake. Pour the batter on top of the pie.

Step 10 -Top with the shredded cheese.

Step 11 -Bake the pie until the cornbread is cooked through, 20-25 minutes.

Step 12 -Garnish with cilantro and serve!
